Saffron is one of the richest foods in carotenoids, such as zeaxanthin, lycopene and many alpha-beta carotenes that play the role of formidable natural antioxidants. Its virtue make it an excellent gastronomic dressing, thanks to three active principles: crocin, with coloring power, picrocrocin, which has a bittering power and safranal, which gives the classic aroma.
The rich presence of B vitamins, especially B1 and B2, contributes to the metabolization of fats, thus making saffron an excellent digestive. For these reasons, this spice could be compared to an elixir of life: it counteracts aging, stimulates metabolism, promotes digestive functions, reduces blood pressure and lowers the amounts of cholesterol and triglycerides that are absorbed with food. Saffron has the great advantage of not adding fat and providing very few calories, which is why saffron is often used in diets food. Modern medicine recognizes saffron as a stimulant for the nervous system and, for external use; it is part of the composition of honey-based preparations to be used for sore and sore gums in general and during the teething phase for babies.
Saffron is a very precious and refined cooking ingredient, fundamental in dishes that symbolize Mediterranean gastronomic traditions; it gives its best, therefore, in dishes based on rice, short pasta, shellfish and seafood, and stewed white meats such as poultry, rabbit and veal.
It is also suitable for enhancing vegetable sauces with a lighter taste. Finally, a pinch is enough in the dough of leavened desserts, biscuits, creams or ice cream.
